How to Make Thai style Chicken Salad in Two Ways

Chicken is one of the main source of protein in Thailand, and you can find dishes with chicken anywhere you turn, on the street, in the night market, day market, every restaurant you go to. One of the great ways of cooking it is grilling it on the skewer, and it often goes with a sauce, like satay. Other ways are by boiling it, steaming it or just stir frying it, and whatever you prefer on having it is always a healthy option. Here are two delicious ways of preparing the chicken:


How to make Northern chicken salad (Laab Gai)

Serves 1-2

Ingredients:

250 grams ground chicken breast
1 1/4 cup mint leaves
2 tablespoons white sugar
2 tablespoons fish sauce
2 1/2 tablespoons lime juice
1 teaspoon ground dried chillies
1/4 cup ground roasted white sticky rice
2 tablespoons green onions, finely chopped
2 tablespoons coriander leaves, sliced
2 tablespoons shallots or white onions finely chopped
1/2 cup water


Preparation:

Cook chicken with a little water. Stirring constantly until the chicken is cooked. Set chicken aside to cool. In a bowl combine the chicken, fish sauce, white sugar, lime juice, ground roasted white sticky rice, green onions, coriander leaves, shallots, ground dried chillies and mint leaves. Mix well and serve with fresh vegetables and sticky rice.

       How to make chicken in coconut milk (Tom Kah Gai)

Serves 1-2

Ingredients:

1/2 cup chicken sliced or seafood
1/2 cup coconut milk
1/2 cup water
6 thin slices galangal ginger
1 stalk lemongrass, lower portion, cut and crush
1 straw mushroom cut into quarter
3 fresh kaffir lime leaves torn in half
1/4 cup sliced spring onion
1/2 tablespoon fish sauce
1/4 tablespoon lime juice or tamarind paste
2 tablespoons coriander chopped
1-2 bird’s eye chilli pepper
half tomato cut into quarters


Preparation:

Combine coconut milk and water with chicken, galangal ginger, straw mushroom, shills, lemongrass, tomatoes and kaffir lime leavers. Cook until chicken is cooked and add the fish sauce and lime juice. Taste it and add more seasoning if you want.

Garnish with coriander leaves and spring onion.
