Green Mango & Glass Noodle Salad Thai Style

Salads are often eaten in Thailand, their taste vary from sweet and sour to hot and sour, super hot and spicy. Some of the most famous ones are the mango salads, which is not the regular fruit salad you know, but its hot and sour and great for dinner party. The glass noodle salad can be served with any kind of meat or seafood you like, and mushrooms and tofu for the vegetarians. 

How to make green mango salad (Yum Ma Muang)

Serves 1-2

1 cup green mango, peeled and shredded
1 cup carrots, peeled and shredded
1/4 cup dried shrimps, pound until fine and fluffy
1/4 cup shallots, finely sliced
4 bird’s eye chillies
1 clove garlic
2 tablespoons fresh lime juice
2 tablespoons fish sauce
2 tablespoons white sugar or palm sugar
1/4 cup roasted peanuts

Preparation: 

Pound the bird’s eye chillies and garlic into a fine paste. Add into the mixing bowl. Then add mango, carrots, shallots, lime juice, fish sauce, ground dried shrimp and sugar. Mix well and serve with roasted peanuts. Be aware of the spiciness of the chillies, always double check the seasoning and acidity.

How to make glass noodle salad (Yum Moon Sen)

Serves 1-2

50 grams glass noodle
1/2 cup boiled minced chicken or pork
1 teaspoon sliced spring onion
10 grams Thai celery
30 grams sliced large onions
30 grams sliced tomatoes
1-2 bird’s eye chillies
1 tablespoon fish sauce
1 tablespoon sugar
2-3 tablespoons lime juice
1 tablespoon smashed garlic
lettuce

Preparation:

Soak the noodles in warm water for 10 minutes or until soft. Use a strainer to hold the noodles dip them into boiling water for a minute or two, than rinse them with cold water. In the bowl mix the boiled chicken and noodles together, then add celery, large onion, tomato, chillies and garlic. Add lime juice, fish sauce and sugar. Mix well. Add coriander and spring onion and place the salad on a bed of lettuce and serve. Amazing salad that is easy to make and its perfect if you want to surprise your friends with some of the great taste of Thailand.
